Breakfast Hashbrowns (aka potato pancakes or latkes)

3 lbs potatoes (boil, cool, peel**, shred) **note: peel will clog up shredder**

one pack sausage (use food processor to make crumbles), 
Butterball Natural Turkey Breakfast Sausage Links - 12 ct

one 8oz pack, Tillamook Farmstyle Shredded Sharp Cheddar Cheese

1/2 cup all purpose flour
1/2 tsp baking powder
4 eggs
avocado oil (grease pan liberally)

Season to taste:
salt, pepper, onion powder, garlic powder, diced/dehydrated onion

Mix all ingredients well
Spoon onto liberally greased pan in even sizes
Shape evenly into disks about the size of your hand
-- even shaping and size will allow for even cooking
-- makes about 24 pancakes (they freeze well)

Bake in preheated oven at 425F for 15-20 minutes on first side
Flip and bake additional 10 minutes
-- timing depends on oven variations and pan variations
-- light color pans cook slower, dark pans cook quicker
-- if first side is very dark when you flip, lay sheet of foil over top to keep from additional browning
-- flipping allows both sides to get crispy
-- cool on baking rack 5-10 minutes before eating 
-- using a rack is best to keep crisp, or use a plate with paper towel to absorb moisture from cooling
-- optional topping suggestions include sour cream, hot sauce or ketchup

To store 
Recommend eating with in 30 days
Steps 1-3 cakes should not touch to keep crisp and avoid sticking together 
1) cool to room temp; 
2) chill in frig one hour or more; 
3) chill in freezer one hour or more; 
4) put individual portions in freezer bags or stack in freezer bin

To reheat
Place two cakes on a plate with a paper towel (absorbs moisture to keep crisp as possible)
Microwave 30 seconds, flip and do another 30 seconds
